tekutina ostrej chuti používaná v kuchyni na okyslenie jedál. Pre slovenskú tradičnú kuchyňu boli charakteristické jedlá s kyslastou príchuťou. Na jej dosiahnutie sa používal ocot, ktorý sa v domácnostiach pripravoval pre vlastnú potrebu z planého alebo lesného ovocia skvasením. Vo vinohradníckych oblastiach sa robil zo skysnutého vína. Na okyslenie jedál sa používal aj vínny kameň, ktorý sa odbíjal zo stien sudov. Kyslastá chuť jedál sa mohla dosiahnuť tiež pridaním kyslého mlieka, srvátky, smotany či nálevu z kyslej kapusty (jucha, rosol). Od začiatku 19. storočia sa výroba octu presúvala do liehovarov. Prvá fabrika na ocot bola založená v roku 1837 v Prešove. Predával sa čapovaný v krčmách, neskôr vo fľašiach v obchodoch.
